Pineapple wrapped bacon is a savory delicious bite sized treat that makes an awesome appetizer. My first experience with this yummy appetizer was when we rang in the 2011 new year with a couple of great friends, and one of the girls had made this yummy treat. Since then I had always thought about making them but hadn't really gotten around to it until recently. They were so good, I wanted to share my recipe with my readers!
Ingredients:
1 can pineapple chunks, juice packed, drained, reserve 3 tbsp.
juice
2 tbsp. soy sauce
1/4 tsp. ground ginger
Dash garlic powder
6 slices bacon, cut each into thirds

Brown sugar
Combine the pineapple juice, soy sauce, ginger and garlic into a bowl and add the pineapple chunks. Let it marinate for about 30 minutes.
Cut slices of bacon while you are waiting for your chunks to be ready. Using a toothpick wrap the bacon around the pineapple and stand on baking sheet.
Bake the bites at 350 for about 15 minutes, when there is only 5 minutes remaining pull them out and sprinkle them with brown sugar. If you put the brown sugar on too soon, it will create a smokey mess. Trust me...
Other instructions I have found is to microwave on high for about 10 minutes...adding the brown sugar at the last minute. I have not tried this, but next time I will and let you know how it goes.
Let them cool and voila! A yummy bite size appetizer! I mean who doesn't love bacon and pineapple...the combination melts in your mouth!
